Mom’s Chocolate Chip Pumpkin Bread

My mom has been modifying this recipe over the years to make it healthier, and it’s still delicious.  It’s one of our family’s favorites! It’s perfect for a family breakfast or fall dessert. Here’s how she makes it:

Yields 2 loaves


  • 1 ½ cup oats
  • 1 cup whole wheat flour
  • ¼ cup flax seeds
  • ¼ cup chia seeds
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoons salt
  • 4 eggs
  • 1 ¾ cup granulated sugar
  • 1 small can (15 oz) 100% pure pumpkin
  • ½ cup unsweetened applesauce
  • ½ cup vegetable oil


  1. Preheat oven to 350°F.
  2. Grease 2 loaf pans.
  3. Combine oats, flour, flax seed, chia seed, baking powder, baking soda, cinnamon, and salt in a medium bowl.
  4. Combine eggs and sugar in a large bowl, then add pumpkin, applesauce, and oil; mix well.
  5. Stir in dry ingredients.
  6. Stir in chocolate chips.
  7. Pour batter into 2 loaf pans.
  8. Bake for 35 minutes.
